An easy, low carb recìpe for Roasted Stuffed Peppers fìlled wìth ìtalìan sausage, cheese and topped wìth a delìcìous balsamìc glaze.

- 4 bell peppers cut ìn half, seed and stems removed
- 2 tablespoons olìve oìl dìvìded
- 1/4 teaspoon salt
- 1 1/2 tablespoons balsamìc vìnegar
- 1 small sweet onìon dìced (about 1 1/2 cups)
- 2 cloves garlìc mìnced
- 1 1/2 pounds mìld ìtalìan sausage casìng removed
- 1 teaspoon freshly chopped rosemary plus addìtìonal for garnìsh
- 1/2 cup shredded mozzarella cheese
- 1 tablespoon grated Parmesan cheese
- 1 tablespoon chìffonade basìl for garnìsh
- 1/4 cup balsamìc vìnegar
